We all have them. The days we wake up with a flavor on our lips and some longing for a favorite food from a cafe or restaurant... you know those delicious raspberry & white chocolate muffins? Yeah, you know you do. The gluten-free, egg-free, dairy-free* variety can be made with a blend of brown rice flour, cornflour, white rice flour, tapioca flour, hemp flour, baking soda, vanilla bean, coconut sugar, egg-replacer, chia seeds, flax-seeds, maple syrup, frozen raspberries and macadamia milk - or any alternative ingredients you have handy. As with a typical cake or muffin mix, blend until desired consistency adding more dry/wet ingredients as necessary. A little bowl of sunshine right there. Smoothie bowls, where were you in my childhood? The thought that I once ate processed cereal with 🐄 milk when 😩 all those breakfasts I could have had a power bowl full of nutrients, all plants nuts and seeds, even mushroom, no regrets... just lots of excitement that life is all about the present moment and we can choose this here and now. So let us choose wisely. This smoothie contains banana, molasses, maca powder, reishi mushroom, spirulina, wheatgrass, kale, baby spinach leaves, honey, macadamia milk. The toasted museli is store-bought and apparently has probiotics and cacao chips 🧐 and hey, it’s very tasty, and also added to the smoothie bowl are toasted coconut flakes, pre-soaked goji berries and chia seeds. Yes yes 🙌 some vegan meals are so delicious you want to eat them for breakfast, lunch and dinner. This whole meal wrap is filled with pre-cooked brown rice, peas, a simple curry pre-made (last nights dinner) with garlic, onion, sweet potato, squash, turmeric, a little chili, a lot of fresh coriander & coconut yoghurt. A sprinkling of coconut cheese, a generous handful of baby spinach leaves, then into the sandwich press, while the nutri bullet blends lemon juice, cucumber (peeled), garlic, salt, pepper and coconut yoghurt into a tzatziki. The combination of savory and sour on the plate is so nourishing. The leftover tzatziki is stored in a clean jar ready for more quick wraps for the family later, because this literally took minutes to put together for lunch and tastes like a vegan cafe meal. The benefit of cooking plenty and storing in the fridge really is the secret to being a well-fed, well nourished, human 😋

A big bowl of chook and duck food. Now I’m almost certain I’m not imagining this: fewer ticks. With all the humidity, heat, and downpours we had a lot of ticks appearing on our animals and ourselves. “The problem is the solution” way of thinking led me to look at our chickens differently, and with some research I learned that ducks are even better at removing the ticks than chickens, who are also very good. So I’m overcoming my upset at the occasional chook poop on the verandah or doormat and instead I’m thanking the chooks and ducks, as there are definitely fewer ticks to be seen. We have 2 little roosters in the kids play area sifting through the grass, 5 chickens sifting through the grass in the horse’s stable paddock, and 5 ducks free grazing through a wider area around the house and gardens. Hopefully Murphy’s law won’t come now to prove me wrong, but I think ducks and chickens are taking care of the surplus of paralysis ticks. Which, in this area of the growing paralysis tick caused mammalian meat allergy diagnosis, is something to care about. #quasivegetarianhomestead #allergy #permaculture

A way to prepare for the day ahead with more plants 🌱 and for snacking on healthier choices, is to make a fresh herb and fruit smoothie and carry it with you in a cooler bag. This is made even more fun and rewarding if recycling a bottle on the way 💐 I do like these cold macadamia milks #nodairy. Empty a pre-opened half-consumed bottle into the blender along with fresh kale 🥬 bananas 🍌 mint 🌿 honey 🍯 blueberries 🫐 pears 🍐. Blender on smooth mode, blend it twice. How to make a complete and filling meal with ALL Plants: Have a selection of vegetables, cooked. Have a second selection of vegetables, thrown together as a salad. Layer the cooked vegetables on top of the salad, it’s filling, delicious, nourishing, healthy, all that 😜 This is pan-sautéed mushrooms in vegetable stock with crushed garlic, fresh basil and cherry tomatoes (served hot). Added from another pan is pan-fried onion & pak choy in coconut oil. The salad is simply cucumber, tomatoes, carrots.
